Today is Friday and I know it, I supposed to write about a food post on Tuesday but I forgot, or was I?
Anyway, to make up on Tuesday post, I'm going to post twice today, on food post and a thought post. So this food post is about brownies (again) I love brownies, so I have a lot of brownies recipes that are good (not bragging or anything lol). You see brownies aren't just one type, they have so many type and kinds to choose from, like if you prefer fudgy or cakey? Brownie has that, like if you like it sweet or bitter-sweet? They got it as well. The point is there are a lot to try to just one type, you know?
So today's type I call it a Sweet-Heaven-Gooey-Fudgy-So-Dark-Chocolate-Goodness-With bit of crunch on top. So if you like that sound, let's get baking!

140 grams all-purpose flour
60 grams Noir Cocoa powder (this brand is the darkest cocoa powder available, if you don't know what it looks like, basically its just an Oreo-kind of dark) and put a ratio with regular dutch- process cocoa powder about 1:3.
140 grams of granulated sugar
2 tbsp. cornstarch
1 tsp baking powder
90 ml melted coconut oil/ vegetable oil
120 ml honey / date honey
60 ml coconut milk
2tsp vanilla extract
90 grams chocolate chips or chunks from a bar chocolate
45 grams lightly toasted coarsely chopped cashews

Makes one big thick 16x16-cm square pan.

  1. Preheat your oven to 180c, and prepare your brownie pan, oil the pan and as usual bit of cocoa powder on the surface, so the brownie won't stick, and you'll get bit of bitter sweet crunchy later on.
  2. Get a bowl, add all the dry ingredients (except the cashews and chocolate chips) you could use strainer but personally I don't, I use spoon to make everything a fine powder and then mix to aerate the dry mixture.
  3. Combine all the wet ingredients, and whisk until they're mixed, no need to get it fluffy or anything, just mixed.
  4. Use a spatula because that’s what I used, and pour the wet ingredients into the dry and mix.
  5. Let it rest for about 5 to 10 minutes, then throw the cashews and chocolate chips into the batter.
  6. Pour the batter into the pan, then bake for 25 min.
  7. After done, take it out, let it cool, don't eat it yet!! I know I know you already drooling, but wait.
  8. Put it into fridge for about an hour, then you could cut it, and eat it.

Because this brownies is sweet, its great for dessert or a side snack along with your espresso. I hope you will try this recipe, and let me know if you are bit confuse with the step, freely to ask me I would love to answer.
